Altbrotmehl kommt bei meinen Broten sowieso meist rein, ebenso selbstgemachtes Backmalz. Da der Teig morgens angesetzt wurde und ich es am Abend bereits ben\u00f6tigte, habe 6 g frische Hefe beigemischt.
